Ingredients: 

  • Pumpkin - 0.5 kg 
  • Potatoes - 0.5 kg  
  • Cheese - 150 g  
  • Onions - 2 pcs. 
  • Garlic - 6 cloves 
  • Butter - 2 tablespoons (with a slide) 
  • Vegetable oil - 2 tablespoons  
  • Salt to taste 
  • Ground black pepper - to taste 
  • Dried Provencal / Italian herbs - 2 tsp  
  • Parsley - 2 pinches (for serving / optional) 


Method: 

  • To bake pumpkin and potatoes in the oven, prepare the foods on the list 

  • Prepare your ingredients in advance. Peel and cut the potatoes and pumpkin into 1/2-inch slices. Cut the onions into rings. Chop the garlic finely. Grate the cheese.  
 


  • Melt 2 tablespoons. butter. Add 2 tablespoons. vegetable oil, 2-3 pinches of salt, a little ground black pepper, dried herbs, chopped garlic and 2/3 grated cheese. Mix everything well 

  • Place the potato and pumpkin slices in a bag or deep container  


  • Add the seasoning and oil mixture, seal the bag and mix again  

  • Place the potato and pumpkin slices in a baking dish check it here alternating with the onion rings

  • Pour the remaining butter and herb mixture into a baking dish and use a brush to spread the butter over the vegetables, being careful to keep most of the cheese and herbs between the slices 

  • Place the vegetables in an oven preheated to 200-210 degrees and bake for 30-40 minutes, until soft. 

  • Then sprinkle the vegetables with the rest of the grated cheese and place in the oven for another 5-7 minutes to melt the cheese. 

  • Oven baked pumpkin with potatoes ready to serve. Sprinkle a pinch of chopped fresh herbs over the dish and serve. Bon Appetit!
