Choco-Pie cookies are a well-known delicacy. In the past, I have already prepared this dessert according to a recipe from the Internet, I remember that there were crispy, even slightly hard cookies, then this fact confused me. Although "choco pie" is essentially a cookie, it is still soft and easy to bite, it goes well with delicate cream and chocolate. This time I decided to experiment and make biscuit dough cookies. In my opinion, I made a great dough. The only thing, I did not know how it would behave when baking. Ideally, you should get slightly flat round blanks. And so it happened, only you can make it a little smaller in diameter, if you refer to the size of store cookies.
We really liked the dessert, you can even say it turned out to be a cake, not a cookie. Perhaps someone will say: "Why bother when you can just buy?" For me, it’s worth it - homemade cakes cannot be compared to store-bought ones, and at least I know what they are made of. However, it's up to you whether to cook or not, I advise. In addition, it is very similar to the original)).
Ingredients
Biscuit:
- Chicken egg - 1 pc.
- Sugar - 140 g
- Sour cream - 4 tablespoons
- Soda - 1/4 tsp
- Butter - 50 g
- Wheat flour - 160 g
Cream:
- Egg white - 2 pcs.
- Powdered sugar - 120 g
- Gelatin - 1 tbsp
- Black chocolate - 100 g
- Vegetable oil - 1 tbsp.

Step by step recipe
- For biscuits, beat the egg and sugar until fluffy.
- Add soft butter.
- And sour cream.
- Beat well.
- Pour flour and add baking soda.
- Mix well. You should get a thick dough, but soft and airy.
- Using a spoon or pastry bag, place the dough on a greased baking sheet or baking paper.
- Bake until lightly golden brown at 180 degrees.
- Use a glass to trim the cakes so that they are all equally beautiful.
- You can put them in pairs in advance.
- Soak gelatin in 50 ml of water. When it swells, melt in a water bath or low heat. Do not boil! Add powdered sugar to the proteins. Beat in a water bath until a crisp white mass.
- Pour in a thin stream of gelatin, beat again. If the mass has become thinner, remove for 5-10 minutes in the refrigerator.
- Put the cream on one circle.
- Cover with the second. Put in the refrigerator.
- Melt the chocolate, add the vegetable oil and stir.
- When the cream is completely thick, cover the cookies with chocolate.
- First dip the sides of the cookies in chocolate, then brush the top with a brush or spoon. Refrigerate.
